Ingredients
-1 can Trader Joe's buttermilk biscuits (8 counts)
-1 egg white, separated & lightly beaten
-8 medium strawberries, washed, trimmed & sliced
-2 oz goat cheese, divided into 8 portions
-2 oz Fontina cheese, cut to 8 pcs
-3 oz butter, melted
-1/2 cup sugar
Instruction
1. Slice strawberries into 1/4 inch thins vertically and set aside. Crumble the goat cheese, slice the fontina cheese into eight portions, and set aside.
2. Separate the biscuits and, with a rolling pin, gently open them up to 4-inch rounds. They will shrink back, so keep stretching them during filling. Brush the edges of each round with egg whites.
3. Place one portion of goat cheese into the center of each round and sprinkle over with a pinch of sugar (1/4 tsp). Next, fan the sliced strawberries on top of the goat cheese and finish by putting Fontina cheese over the strawberries. Gently fold edges up and over layers and pinch to seal.
4. Brush both sides of each finished pocket with butter and place it in your air fryer basket, giving adequate space between pastries for expansion.
5. Set air fryer to 325 F and cook for 8 to 10 minutes. At minutes 6-7, once the bottom sides are lightly browned, using kitchen tongs, turn them over. Cook until golden brown and increase cooking time by a minute or two if needed.
6. Butter both sides of each fritter and coat them with sugar. Serve hot.
Tips
🍓Dont worry if some fritters open up during cooking. It gives them a rustic character.
🍓These fritters are quite large. Avoid stacking during cooking using parchment paper, as some other recipes suggest. Cook them by working through batches if your air fryer is small.
🍓This recipe can be made using an oven too. Skip brushing with butter (step 4). Heat oven to 350 F and cook for 15 minutes.
